P r e t z e l s (salty & sweet)

24.10.13
On Monday morning after a tiring day at school, I walked by a bakery that I love cause it bakes and sells the best pretzels in my town! Having no time to buy one, I grabbed the bus and came home to make some! I watched some recipes on youtube and read some others in other blogs. I ended up with this recipe cause it was the clearest and easiest of all. When I got in the kitchen I thought that these babies would be ready in an hour but the steps you have to follow to make these beauties are a lot and the whole process was a little tiring but so so fun!! And then when you get them out of the oven, the smell is incredible! As for the taste, yeah, they are addicting!!
It worth a try, believe me!!

I N G R E D I E N T S for P R E T Z E L S :
1 ½ cups of water at 110 degrees
1 tablespoon of sugar
1 teaspoon of salt
1 package of dry yeast
2 tablespoons of melted butter
4 ½ to 5 cups of all purpose flour

6 cups of Water
1/3 cup of Baking Soda

egg wash (1 egg beaten with 1 tbsp of water)
kosher salt for topping
or
sugar n’ cinnamon (if you want sweet pretzels)

DiRECTIONS:
- In the bowl of an electric mixer fitted with a dough hook, add the water, sugar and salt, stir with a spatula and then sprinkle the yeast on top. Let it sit for about 5 minutes or until the yeast begins to foam.
- Add the flour and the butter. Turn the mixer to low and mix until everything is combined. Turn the speed up to medium and mix for about 5 to 7 minutes or until you have a smooth dough.
- Brush the bottom and sides of a bowl with some vegetable oil and put the dough in the oiled bowl. Cover and let it rise in a warm spot for about 1 hour. Don’t skip this step cause then the dough won’t rise!
- Once the dough has risen, cut it into 12 equal pieces, roll each piece into a rope and make a U shape, then press the ends of the rope at the bottom of the U shape and pinch the ends. Lay 2 baking sheets with parchment paper and brush some vegetable oil on the parchment paper. Place your shaped pretzels onto the oiled parchment paper line baking sheets.
-Having formed your pretzels, add the 6 cups of water and the baking soda to a roasting pan and set it over a burner. Turn the heat on to medium and let the water come to a rolling boil.
-Carefully place the pretzels into the boiling water for 30 seconds one at a time. Remove from the boiling water using a flat spatula and put them back on the oiled parchment paper lined baking sheets. Continue to cook all of them. Don't skip this part cause cooking them in baking soda makes them stable and crunchy.
-Then brush them with the egg wash and sprinkle each one with a little kosher salt oe sugar and cinnamon for the sweet ones.
-Bake for 10 to 12 minutes or until deeply golden brown in a preheated oven to 200°C.
