Food | Bruschetta with tomato, feta & basil

26.9.15

fter a long time, the deer is back with a a new recipe. It's been half a year or so from the last time we got in the kitchen to make something for the blog. These months the three of us were busy and so we didn't have the time to cook or bake something delicious for the deer. Getting back in the the kitchen felt so fun and creative. For our comeback we chose to give you one of our favorite food recipes. It's more like an appetizer but when you have not so much time to cook and you want something really delicious, these bruschettas are the best choice. In the recipe below we are just writing the ingredients you will need and not the exact dosage, because this depends on your appetite and on how many servings you want. Also, you can add any ingredient you want and have in your fridge (olives, dried tomato, peppers). It's so nice when a recipe allows you to experiment with the things you have in your fridge, isn't it?!

ετά από αρκετό καιρό το ελαφάκι σας ετοίμασε καινούργια συνταγή. Πέρασε σχεδόν μισός χρόνος από την τελευταία φορά που δημοσιεύσαμε μία συνταγή εδώ στο μπλογκ. Τους τελευταίους μήνες ήμασταν και οι τρεις αρκετά απασχολημένες κι έτσι δεν είχαμε όσο χρόνο θα θέλαμε για να ετοιμάσουμε κάτι νόστιμο για το ελαφάκι. Μπαίνοντας πάλι στην κουζίνα..χμμ πολύ διασκεδαστικό και δημιουργικό ταυτόχρονα. Επιλέξαμε, λοιπόν, να σας δώσουμε μία από τις αγαπημένες μας συνταγές. Θα το έλεγε κανείς ορεκτικό αλλά πιστεύουμε πως αν έχεις λίγο χρόνο στη διάθεσή σου για μαγειρική και θες να φας κάτι πολύ νόστιμο...αυτές οι μπρουσκέτες είναι η καλύτερη επιλογή! Στη συνταγή παρακάτω γράφουμε μόνο τα υλικά που θα χρειαστείτε και όχι την ακριβή δοσολογία γιατί αυτή εξαρτάται από τις μερίδες που θέλετε αλλά και τις γεύσεις σας. Μπορείτε, επίσης, να προσθέσετε οποιοδήποτε άλλο υλικό θέλετε και έχετε στο ψυγείο σας (λιαστές ντομάτες, πιπεριές, ελιές). Δεν είναι πολύ ωραίο μία συνταγή να σε αφήνει ελεύθερο να πειραματιστείς με διάφορα υλικά;
a French baguette or a similar type of bread
ripe tomatoes
feta cheese
olive oil
a clove of garlic
oregano
salt
fresh basil leaves

Cut the baguette in medium slices and drizzle them with olive oil. Place them in a baking tray covered with baking sheet or on a rack. Bake them until they turn golden brown at a 180° C oven. For an easiest option, just toast them in a toaster.
While they are in the oven/toaster cut the tomatoes and feta in little cubes. Drizzle them with some olive oil and mix them. Add some salt and oregano. If you want add the finely chopped basil in this mix. We prefered to put some leaves on our brischettas in the end.
Right after baking/ toasting rub the the top of them with a clove of garlic. If you don't like garlic you can skip this part but -believe us- this is what's all about!
On each of them add a spoonful of the tomatoes and feta mix. You can drizzle some olive oil again if you want so.
For the finishing touch, add some basil leaves on top.

Bon appétit!

Love,
