Christmas girly meeting - Double layered Chocolate Cake Recipe

  Previous Friday, we invited our deer girls at the deer home to celebrate our last evening- night before Christmas. And when I say last evening, I mean that some of the girls return to their hometowns for Christmas and so this was their last day here at Volos. We arrange a Christmas meeting every year and every single year we start thinking what we should cook and bake for this special evening! This year our time was so restricted due to university lessons and some job stuff! So, we made less yummy things than we have planned! We woke up early at morning and got in the kitchen! I started with the double layered Chocolate Cake with chocolate buttercream and Evgenia with the Macarons filled with lemon and clementine curd. We'll give you the recipe for the cake in details below. For the macarons, you just follow the recipe we have given to you in this post! As for the D e l i c i o u s lemon- clementine curd? Follow Sorted Recipe here. We were kinda unlucky with the macarons cause we let the mixture stay for over an hour and so the slight skin was formed before we put it in the piping bag. You'll see that the circles are not soooo circles and the surface of them has cracks, something that they shouldn't have. We were really sad about that but they were really really tasty and matched perfectly with the curd! So....happy! (: 
    As for the food, we decided to bake some cheese, spinach and frankfurters little pies and a pizza bread. It was the first time we had ever made a pizza bread. It needs some hours so that the dough for the bread rises but the result is really yummy and soft. You should totally try this recipe! It's perfect for parties and for the festive table, too! 
     For drink, we prefered the nutella hot chocolate. Coconut or vanilla flavored with whipped cream and sprinkles on top. We really enjoyed this hot chocolate that cold winter evening!  


 And below we give you in details the recipe for the best Chocolate Cake you've ever tried! It tastes and smells like coffee, vanilla and cocoa at the same time! Even if we are not chocolate lovers, we really enjoyed that cake and we wanna make it again! Maybe for New Year's Eve? Who knows? 
INGREDIENTS (FOR THE CAKE):
2 cups sugar
1 3/4 cups all-purpose flour
3/4 cup uns
weetened cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon koshe
r salt
2 eggs
1 cup buttermilk
1 cup strong black coffee (we used Cappuccino!)
1/2 cup vegetable oil
2 teaspoons vanilla extract
DIRECTIONS:
1. In a large bowl mix together the sugar, flour (sifted), cocoa(sifted), baking soda and the baking powder. Add eggs, buttermilk, coffee, oil and vanilla. Beat on medium speed for about two minutes till everything is incorporated well. The batter will be thin. 
2. Grease and flour two same sized round baking pans. We used two 25 cm. baking pans. You can make one big cake by pouring the batter into a large baking pan. Pour the batter evenly into the prepared pans and bake them in a preheated 175°C oven for 30- 35' or until a wooden toothpick inserted in center comes out clean.   
3. Let them cool for 10 minutes. Then remove the cakes from pans to wire racks in order to cool completely.
4. While the cakes cool, we are making the Chocolate Buttercream Frosting. 


INGREDIENTS (FOR THE FROSTING):
1 cup of unsalted butter (2 sticks) softened
3 1/2 cups of confectioners sugar
1/2 cup of cocoa powder
1/2 teaspoon of salt
2 teaspoons of vanilla extract
4 tablespoons milk or heavy cream (you used milk)
DIRECTIONS:
1. In a mixer, beat the butter at medium speed until it becomes fluffy (for about 2 minutes).
2.Sift the confectioners’ sugar and the cocoa powder to assure there are no lumps. Gradually add the sifted confectioners’ sugar and the cocoa powder until they are absorbed by the butter. Beat on low speed after each addition. 
3. Increase mixer speed to medium and add vanilla extract, salt and milk. Beat for 3 times.
NOTES: If your frosting needs a more stiff consistency, add a little more sugar. If your frosting needs to be thinned out, add additional milk 1 tablespoon at a time.

STYLING:
1. When the cakes are cool enough, spread a part of the frosting with a spatula on the one cake. If you like add some fresh or dried fruits on the frosting. We added some dried banana chips. Then place the other cake above it as a cap.
2. Cover with the remaining frosting the whole cake. So, now you have a double layered chocolate cake!
3. Decorate it with the fruits you have added in the cake or with your favorite sprinkles.

As for us, on Christmas Eve and some of the first Christmas hours we had a great time dancing salsa and latin rhythms at a beautiful and fun salsa party!
