Bake | Clementine cake

pring is here. Let's celebrate it with something sweet and orange. A clementine cake. Not some ordinary cake. The most delicious and moist cake you have ever tasted. A couple of months ago we watched "The secret life of Walter Mitty" for the first time. This movie is amazing. We watch it over and over again and never get bored of it. Beautiful and peaceful sceneries of Iceland, Greenland and Himalayas, a lovely soundtrack, inspiring scenes and quotes and of course this perfect clementine cake. You should definetely watch this movie and bake this cake. That citrus flavor with the sweetest icing and those candied clementine slices make the perfect cake for your afternoon tea. Everyone who tasted this cake loved it. We will bake it again and will try it with lemons or oranges. 


νοιξη. Ας γιορτάσουμε τον ερχομό της με κάτι γλυκό και πορτοκαλί. Ένα κέικ μανταρίνι. Όχι ένα οποιοδήποτε κέικ. Το πιο νόστιμο και αφράτο κέικ που έχεις δοκιμάσει. Πριν από δύο μήνες περίπου είδαμε για πρώτη φορά την υπέροχη ταινία "The secret life of Walter Mitty".  Από τότε την βλέπουμε συνέχεια, ξανά και ξανά και δεν τη βαριόμαστε. Όμορφα και γαλήνια τοπία από Ισλανδία, Γροιλανδία και Ιμαλάια, ένα υπέροχο soundtrack, σκηνές και διάλογοι που σου δίνουν έμπνευση...και φυσικά αυτό το κέικ μανταρίνι. Πρέπει οπωσδήποτε να δεις την ταινία και να ψήσεις αυτό το κέικ. Άρωμα εσπεριδοειδούς, η πιο γλυκιά επικάλυψη και καραμελωμένα μανταρίνια δημιουργούν το καλύτερο κέικ για να συντροφεύει το απογευματινό σου τσάι. Όλοι όσοι το δοκίμασαν το λάτρεψαν. Θα το δοκιμάσουμε σίγουρα με λεμόνια ή πορτοκάλια.

||The cake:
3 to 5 clementines (about 360-375 grams)
6 eggs
1 cup and 2 tablespoons sugar (225 grams)
2 1/3 cups ground almonds (250 grams)
1 heaping teaspoon baking powder 

||Candied clementines:
2-3 clementines
1 3/4 cups granulated sugar (375 grams)
1 cup water 

||Clementine icing:
1 1/2 cup powdered sugar 
1-2 clementines, juice 


||The cake: Put the clementines in a pot with cold water to cover them. Bring to a boil and then cook for 2 hours in lower temperature. Drain them and when they are cool, cut each clementine in half and remove the seeds. Then finely chop the whole fruit in a food processor. Yes the whole fruit! That makes the difference. 
Preheat the oven to 190°C. 
Butter and line a pan with parchment paper. 
In a bowl beat the eggs. Add the sugar, almonds and baking powder. Mix well and then add the chopped almonds. Pour the mixture in the pan and bake for 40-60 minutes in the lower part of the oven in order the cake won't be burnt. Start check the cake after 30-35 minutes. If the top starts burning, cover with foil. When the cake is done, let it cool on a rack. When it's cool, you can take it out of the pan. 

||Candied clementines: Slice the clementines thinly. In a saucepan add the water and sugar and bring to a boil. Add clementines and let simmer until the slices are soft. Let them cool on a piece of baking paper. Don't overcook them cause they will become really hard to eat. 

||Clementine icing: Sift the powdered sugar in a bowl. Add the clementine juice and mix well until you have a smooth paste. Add more sugar or juice, until you reach the consistency you want. 

||The final cake: Pour the icing over the cake. Let it cool for some minutes and then top with candied clementines.
